# How are your freeze-dried patties made?

We are very focused on protecting and preserving the cellular structure of our whole foods.  For this reason, raw ingredients are gently blended at their frozen or semi frozen state depending on each individual ingredient.  The batch is then shaped into their respective forms as per their recipe specifications, flash frozen, and then moisture is removed in the freeze-dryer allowing for shelf stability for two years.
